Complex carbohydrates (fiber-rich foods), are considered staples in most vegetarian and whole food diets. Dietary fiber offers a number of health benefits, which include supporting cardiovascular and digestive systems, promoting regularity and providing food for the healthy bacteria that reside in our gastrointestinal tract. 

Fiber-rich foods are known to be gas-producing because the body does not produce the enzymes necessary to break these foods down into easily digestible carbohydrates. The fiber in grains, seeds, legumes, fruits and vegetables contains a variety of resistant starches, glycogen and related polysaccharides.
